Job Title:  Master Counter Butcher                                                                 Site Reporting Line:  Site Manager

Job Purpose: To effectively run the business unit, providing an extremely high-end butcher counter experience that brings our customers back each time. Be the voice and face of our brand; implementing unique eye-catching food displays in our store coupled with exceptionally high customer service, maintaining high standards of customer service, food preparation, cleanliness and hygiene.   By taking full responsibility of the counter you will continually develop your team in order to facilitate the efficient and effective operation of the business unit and maximise sales turnover and profit for the store against targets through the effective use of all available resources.

Key Responsibilities

 

  • Achieve and exceed company sales targets instore on a weekly basis
  • Working one-to-one with site management to develop concrete action plans to improve performance in store
  • Plan and implement sales marketing initiatives, including tastings and promotions on a regular basis
  • Develop team sales capabilities
  • Understand and maintain business unit cost management, profit and loss and margins
  • Maintain current knowledge of cutting of all types of meat and poultry and meat operation processes, including dry aging and age rotation
  • Understand yields and cost management through meat merchandising
  • Be passionate and knowledgeable about our products and services
    • Maximise the company’s retail proposition in the area, measured by customer feedback
    • Develop and maintain a positive culture to customer service, providing advice on cuts and how to cook them
    • Respond directly and positively to customer feedback, taking remedial action as required
    • Implement customer feedback and complaint procedure
    • Ensure 100% satisfaction through interaction with customers, colleagues and display & merchandising of counter
    • Coaching and developing Counter team to ensure best practice and maintaining the highest level of customer service
    • Set standards, objectives and targets for each team member
    • Monitoring of all aspects of team performance and implement improvement plans
    • Drive a strong team culture of trust and commitment to our high standards, providing regular and constructive feedback to enhance individual and team performance
  • Oversee preparation and display of all products instore
  • Implement stock rotation SOP on a first in first out basis
  • Oversee all stock management within the store
  • Develop and oversee online and delivery services
  • Maintain and develop positive supplier relationships, supporting local producers
  • Ensure all products are produced to recipe
  • Ensure the control of all cleaning, audits, temperatures and health & safety documentation administration within your store
  • Monitor all necessary controls within store in order to minimise shrinkage
  • Ensure that company procedures are adhered to in relation to waste, returns and counter layout, and continuously look to suggest improvements
  • Keep risk assessments, maintenance records and report necessary faults
  • Monitor and report on any security issues
  • Ensure that all point of sale is current and displayed as appropriate
  • Ensure waste targets being met
    • Ensure all HACCP and food safety policies & procedures are adhered to
  • Ensure accurate food traceability records are maintained
  • Ensure hygiene of store and equipment are kept to the required standards

Skills/ Experience

  • A fully qualified Butcher with significant Butchery experience (preferably in a retail environment)
  • Excellent Knife skills essential
  • Fluent English (written and verbal)
  • Experience of dry aging processes desirable
  • Experience in running online and delivery service desirable
  • Commercial awareness and understanding essential
  • A hands-on team builder and motivator, with the integrity, drive and leadership qualities to inspire confidence and secure high standards of performance and professionalism in a challenging and competitive environment
  • A lateral and analytical thinker, with an ability to see issues both strategically and at a practical level, from the company, employee and customer perspectives
  • A decisive, results orientated self-starter with high energy levels and initiative
  • An ability to provide effective and concrete communication to all levels of the business
  • Good time management and organisational skills, including the ability to work to tight schedules, prioritise and plan according to strategic requirements
  • Able to carry out the physical aspects, including but not limited to carrying produce trays, processing deliveries, assisting customers with shopping, robust cleaning, cutting movements
  • Extensive and proven knowledge in the cutting of all types of meat and poultry essential
  • Passionate about customer service and experience essential
  • Meticulous attention to detail essential
  • Sound understanding of integrity and compliance to food safety and hygiene requirements
  • Commitment to good practice
  • Strong IT skills in retail/stock management systems and Office packages (particularly Outlook and Excel)
